Vegan Tortilla Soup


2 tsp grapeseed oil

1/2 cup chopped red onion

1 cloves of garlic minced

1/2 cup chopped green bell pepper

1/2 cup chopped red bell pepper

1/2 tsp cumin

1/4 tsp oregano

1/2 tsp paprika

1 tbsp chopped chipotle pepper

3/4 cup red lentils

2 cups water or vegetable broth

2 cups diced tomatoes

1 tbsp chopped dulse

1 cup cooked black beans

Avocado, cilantro and lime juice for garnish


  1. Heat oil in a saucepan over medium heat. Add onion and garlic and cook for 3 minutes Add bell peppers cook for 3 to 4 minutes.

  2. Add all spices and diced tomatoes. Cook for 1 to 2 minutes. 

  3. Add the washed and drained lentils, and broth or water. Pressure cook on high for 7 minutes. Let steam release naturally.

  4. Add cooked beans.

  5. Top with garnish of avocado, cilantro and lime juice.
